INGREDIENTS


  • 2 small rolls of plain goat cheese or 1/2 of very large log
  • 2 Tbsp olive oil
  • prepared pesto
  • 1 loaf of baguette bread (thinly sliced)
  • butter
  • 1 package prosciutto
  • garlic powder & pepper to taste
  • 2 cups fresh garden cherry or grape tomatoes
  • 1/4 to 1/2 cup Greek olive halves

DIRECTIONS

 

  1. Rinse and completely dry cherry tomatoes
  2. Place on baking sheet and roast in an oven at 400 degrees (estimated 15 to 20 minutes) until piping hot or charred (whatever your preference).
  3. Meanwhile, spread goat cheese into a pie dish into a even layer.  It is okay if it doesn't complete cover the bottom.
  4. Sprinkle Greek olives throughout.
  5. Add garlic powder generously or add prepared minced garlic and pepper.
  6. Drissle with olive oil. 
  7. You may add the pesto now or you can allow guest to do themselves or assemble in layers. We do not add now.
  8. Remove roasted tomatoes from the oven. 
  9. Reduce oven temperature to 350 and allow to warm while you prepare the bread.
  10. Toast each side of the bread slices in batches in a buttered frying pan on medium.
  11. Wait for the pan to warm, then add butter.
  12. Watch the temp and reduce as needed to not burn the bread.
  13. Once the bread is done, place on a large platter and remove the dip from the oven.
  14. Add roasted tomatoes to dip and stir.
  15. Add half a slice of prosciutto to each piece of bread, then pesto, then dip and serve.
