INGREDIENTS

 

  • 2.5 – 3 pound shoulder roast or chuck roast
  • 1 tablespoon chipotle chili powder
  • 3 tablespoons ancho chili powder
  • 2 teaspoons onion powder
  • 1 teaspoon granulated garlic
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 (10-ounce) can Rotel diced tomatoes with chilis
  • 1 (7.75 ounce) can green jalapeno wheels, drained
  • ½ cup beef stock
  • ½ teaspoon of salt
  • juice of 1 lime
  • ¼ cup chopped cilantro

DIRECTIONS

  1. Place beef roast into the slow cooker
  2. In a small bowl mix together chipotle chili powder, ancho chili powder, onion powder, granulated garlic, cumin, and coriander
  3. Sprinkle the spice mixture over the beef
  4. Pour the diced tomatoes, jalapeno wheels, and beef stock over the beef
  5. Turn the roast a couple times to mix up the ingredients
  6. Cook for 5 hours on high or 8-10 hours on low
  7. Remove beef from slow cooker, place into a large bowl, and shred
  8. After the beef is shredded take some of the juice from the slow cooker and stir it into the beef
  9. Stir in ½ teaspoon of salt, lime juice, and cilantro
  10. Serve in tacos, burritos, or any other Mexican inspired recipe
