- 4 cups diced potatoes (peeled)
- 1 small onion, minced
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 1/2 lb Swiss cheese, grated
- 1/2 cup cubed dry bread crumbs
- 1 tsp. salt
- 2 tbsp. butter
- 2 cups Medium White Sauce
Medium White Sauce:
- 4 tbsp. butter
- 4 tbsp. flour
- 2 cups milk
- Place potatoes, onion and salt in pan
- Cover with boiling water and cook for 5 minutes
- Drain and place potatoes in a greased baking dish
- Season with salt and pepper
- To make sauce, melt butter, add flour, then milk
- After it thickens, add cheese, stir until melted, and pour over potatoes
- Brown bread cubes in skillet in butter (or use bread crumbs instead)
- Bake at 350 for 30 to 40 minutes.
- Make these up the night before to enhance flavor.
- Special enough for a holiday meal and easy enough to make on a regular basis
