INGREDIENTS

  • 4 cups diced potatoes (peeled)
  • 1 small onion, minced
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 lb Swiss cheese, grated
  • 1/2 cup cubed dry bread crumbs
  • 1 tsp. salt
  • 2 tbsp. butter
  • 2 cups Medium White Sauce


Medium White Sauce:

  • 4 tbsp. butter
  • 4 tbsp. flour
  • 2 cups milk

DIRECTIONS

 

  1. Place potatoes, onion and salt in pan
  2. Cover with boiling water and cook for 5 minutes
  3. Drain and place potatoes in a greased baking dish
  4. Season with salt and pepper
  5. To make sauce, melt butter, add flour, then milk
  6. After it thickens, add cheese, stir until melted, and pour over potatoes
  7. Brown bread cubes in skillet in butter (or use bread crumbs instead)
  8. Bake at 350 for 30 to 40 minutes.
  9. Make these up the night before to enhance flavor.
  10. Special enough for a holiday meal and easy enough to make on a regular basis
