INGREDIENTS

  • 4 Cups (about 4 large potatoes)
  • 2 eggs, lightly beaten
  • 1 cup all-purpose flour
  • 3/4-1 cup finely diced onion
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • Oil for frying
  • Maple syrup or applesauce

DIRECTIONS

  1. Peel and shred potatoes; place in a bowl of cold water
  2. Line a colander with cheese cloth or paper towels
  3. Drain potatoes into cloth and squeeze out as much moisture as possible
  4. In a large bowl, mix dry ingredients flour, baking powder, salt and pepper
  5. Beat 2 eggs in a bowl
  6. In a separate bowl, mix potatoes and onions
  7. Add beaten eggs to wet ingriedents
  8. Then slowly combine the dry ingriedents into the wet ingredients, mixing with your hands
  9. In an electric skillet, heat 1/4 in. of oil over medium heat
  10. Drop batter by 1/4 cupfuls into oil, about 3 in. apart
  11. Press lightly to flatten
  12. Fry until golden brown, about 4 minutes on each side
  13. Drain on paper towels
  14. Repeat with remaining batter
  15. Top with maple syrup or applesauce
