- 3 cups cooked mashed sweet potatoes
- 1 cup brown sugar (can decrease to 2/3 )
- 1/2 teaspoon salt
- 2 eggs, beaten
- 1/2 stick butter (can decrease to 1/3)
- 1/2 cup milk
- 1/2 teaspoon vanilla
- Mix above ingredients until smooth and spoon into casserole dish.
Topping mix:
- 1/2 cup plain flour
- 1 cup brown sugar
- 1 cup chopped pecans
- 1/2 cup melted butter
- Mix ingredients until smooth and spoon into casserole dish
- Add the topping mix mixture. The topping mixture will be thick - just spoon on top in little "piles" - mixture will spread as you cook
- I usually double this for a large casserole 8x11
- Bake 350 for 35 minutes
