6 chicken breasts or several chicken legs (debone and chop up)
2 stalks celery, chopped
1 onion, cut in quarters
2 pkgs frozen broccoli spears or a big bundle of fresh
salt and pepper to taste
2 cans condensed cream of chicken soup
1 cup mayonnaise
1 tsp. lemon juice
1/2 cup grated cheddar cheese
1 cup bread crumbs
butter
DIRECTIONS
Debone and skin chicken
Put deboned chicken in water with celery and onion and bring to a boil and cook for about 20 minutes or until tender
Cut cooked chicken into bite sized pieces
Cook broccoli in a separate pot and drain
Mix soups mayonnaise and lemon juice together and set aside
Butter a glass 9"x13" dish(so it doesn't stick to pan,can use Pam Spray), layer broccoli in bottom of dish in rows
Sprinkle with salt and pepper
Place bite sized chicken pieces on top of broccoli
Pour soup mixture on top of chicken and sprinkle with cheddar cheese and bread crumbs
Cut 8 slivers of butter about 1/4" thick and place them on top, spread them out evenly across the top, this will help the bread crumbs turn into a good crust
Bake at 350 for 30 minutes. Let sit for 5-10 minutes before serving
