INGREDIENTS

  • 1 1/2 Cups Mozzarella Cheese
  • 1 1/2 Cups Cheddar Cheese
  • 1 Cup Cooked Chicken
  • 1/4 Cup Bell Pepper
  • 1/4 Cup Yellow Onion

DIRECTIONS

 

  1. Preheat oven to 400 F

  2. Cover a pizza pan with Parchment Paper (NOT wax paper)

  3. Mix the Cheeses together, then evenly spread them over the parchment paper (in a circle shape)

  4. Bake the cheese shell for 5-10 minutes

  5. Then saute in a pan the green pepper and onion and set aside

  6. Remove cheese from oven and dab off cheese oils as soon as it comes out of the oven with paper towel

  7. Place the chicken over half of the cheese shell

  8. Then add the sliced peppers and the onion to half the quesadillas

  9. Fold the Cheese shell in-half over the chicken and veggies. Press it firmly, then return it to the oven for another 5-10 minutes

  10. Then remove and flip entire quesadillas over carefully and cook for another 5-10 minutes until very crispy...*make sure NOT to turn quesadillas until it is crispy, if the cheese is gooy it will not flip well and you will have a big mess

  11. Serve with sour cream, salsa and guacamole. Garnish with chopped fresh basil, parsley or cilantro.
