INGREDIENTS

  • 1 small package Tortellini from the refrigerated section of your grocery store
  • 1/2 cup to 1 cup feta, crumbled (your preference)
  • 1 small red onion, sliced
  • 1 small green pepper sliced
  • 1 medium tomato, diced
  • prepared balsamic or Italian dressing (your preference)
  • 3 pickling cucumbers, peeled and sliced
  • 1/2 cup Greek olives

DIRECTIONS

  1. Prepare tortellini according to package directions, then refrigerate to cool
  2. Slice and dice vegetables and then toss with cooled pasta
  3. Add olives and feta and toss
  4. Add dressing and stir
  5. Serve immediately or cool and serve
