- 1 small package Tortellini from the refrigerated section of your grocery store
- 1/2 cup to 1 cup feta, crumbled (your preference)
- 1 small red onion, sliced
- 1 small green pepper sliced
- 1 medium tomato, diced
- prepared balsamic or Italian dressing (your preference)
- 3 pickling cucumbers, peeled and sliced
- 1/2 cup Greek olives
- Prepare tortellini according to package directions, then refrigerate to cool
- Slice and dice vegetables and then toss with cooled pasta
- Add olives and feta and toss
- Add dressing and stir
- Serve immediately or cool and serve
