INGREDIENTS

  • 1 large head broccoli, cut in pieces
  • 1/2 cup butter or margarine
  • 1 med. onion, chopped
  • 1/2 cup flour
  • 2 cups milk
  • 1 cup grated cheddar cheese
  • 2 cans chicken broth
  • salt and pepper to taste

DIRECTIONS

  1. Cook broccoli pieces in small amount of water until tender
  2. Drain most of liquid and set aside
  3. In butter, saute onion until transparent.
  4. Stir in flour and cook about 5 minutes
  5. Add milk slowly, continually stirring
  6. Stir in grated cheese and blend until smooth
  7. Puree about half the broccoli in blender or food processor
  8. Leave remaining half in pieces
  9. Slowly blend chicken broth into sauce mixture, then add puree and broccoli pieces
  10. Stir to blend
  11. Add salt and pepper
  12. Simmer about 15 minutes
  13. Do not allow to boil
  14. Serve with garnish of choice
