- 1 large head broccoli, cut in pieces
- 1/2 cup butter or margarine
- 1 med. onion, chopped
- 1/2 cup flour
- 2 cups milk
- 1 cup grated cheddar cheese
- 2 cans chicken broth
- salt and pepper to taste
- Cook broccoli pieces in small amount of water until tender
- Drain most of liquid and set aside
- In butter, saute onion until transparent.
- Stir in flour and cook about 5 minutes
- Add milk slowly, continually stirring
- Stir in grated cheese and blend until smooth
- Puree about half the broccoli in blender or food processor
- Leave remaining half in pieces
- Slowly blend chicken broth into sauce mixture, then add puree and broccoli pieces
- Stir to blend
- Add salt and pepper
- Simmer about 15 minutes
- Do not allow to boil
- Serve with garnish of choice
