- 1 lb ground beef (grass fed)
- 1 medium chopped onion
- 1/2 large green pepper chopped
- 2 small jalapeno pepper chopped (seeds removed prior)
- 1 28 ounce can Muir Glen Organic Fire Roasted Diced Tomatoes
- 2 16 ounce cans kidney beans (drained)
- 1 packet McCormick Chili Tex-Mex seasoning mix
- salt to taste
- Red Pepper flakes to taste (a couple of shakes)
- Pampered Chef Chipotle Rub Adobo De Chipotle (a couple of shakes)
- Sargento shredded sharp Cheddar cheese
- Cook the beef, onion, green pepper, jalapeno pepper until meat is brown
- Stir in tomatoes, kidney beans (drained), chili seasoning mix, red pepper flakes, and chipotle rub
- Bring to boil, reduce heat
- Cover and simmer for 20 minutes
- Upon serving, top with a generous amount of Sargento shredded sharp Cheddar cheese and allow to cool for a few minutes before serving
