INGREDIENTS

  • 1 bunch (about 1 pound) asparagus, ends trimmed
  • 1 Tbsp. olive oil
  • salt and pepper
  • 1/3 cup blue cheese crumbles

DIRECTIONS

 

  1. Preheat oven to 400° F
  2. Lay out asparagus side-by-side in an even layer on a baking sheet covered with parchment paper or aluminum foil
  3. Drizzle the asparagus evenly with oil, then sprinkle with generous pinch or two of salt, and lots of freshly-ground black pepper
  4. Give the pan a few good shakes to coat the asparagus evenly.
  5. Cook for 10 minutes
  6. Add blue cheese crumbles and then bake a couple more minutes
