- Small Corn tortillas
- A couple spoonful’s of bacon grease or lard
- 1 can of chili beans smashed with spoon
- Feta
- Fresh cilantro
- Tostito salsa chunky
- 1 large egg
- Texas Chilli Seasoning
- First, heat a large pan to medium-high heat with bacon grease or lard.
- Place on small corn tortilla in the pan. Let it sit for about 30 - 45 seconds depending on how hot your pan is and flip it.
- Pan fry one egg sunny side up or once over easy beside the tortilla based on your preference.
- Spread a couple spoonful’s of mashed chili beans onto the tortilla.
- Add egg on top off the chili beans in the pan, sprinkle Texas chili seasoning, and add crumbled feta on top of the egg.
- Fry them in the pan until they lightly brown and get a bit puffy, but not crispy.
- Remove from heat, set it onto a plate, and pour prepared salsa and fresh cilantro.
- When doing more than one, take the pan off on the burner and let the burner cool slightly, Regrease the pan if needed
