INGREDIENTS

  • Small Corn tortillas
  • A couple spoonful’s of bacon grease or lard
  • 1 can of chili beans smashed with spoon
  • Feta
  • Fresh cilantro
  • Tostito salsa chunky
  • 1 large egg
  • Texas Chilli Seasoning

DIRECTIONS

  1. First, heat a large pan to medium-high heat with bacon grease or lard.
  2. Place on small corn tortilla in the pan.  Let it sit for about 30 - 45 seconds depending on how hot your pan is and flip it.
  3. Pan fry one egg sunny side up or once over easy beside the tortilla based on your preference.
  4. Spread a couple spoonful’s of mashed chili beans onto the tortilla.
  5. Add egg on top off the chili beans in the pan, sprinkle Texas chili seasoning, and add crumbled feta on top of the egg.
  6. Fry them in the pan until they lightly brown and get a bit puffy, but not crispy.
  7. Remove from heat, set it onto a plate, and pour prepared salsa and fresh cilantro.
  8. When doing more than one, take the pan off on the burner and let the burner cool slightly,  Regrease the pan if needed
