- Pre heat grill to 450° with cast iron pan on grill
- Wash and cut fish into 4" X 4" squares and set to side
- Mix dry ingredients in a bowl big enough to dredge fish into
- Put fish into dry rub, coating all sides
- Add 1/2" deep of extra virgin olive oil to cast iron pan on grill
- Let olive oil heat up till it's nice and hot
- Place fish into cast iron pan and cook each side 3-4 minutes or unit fish becomes opaque and flakes.
- Put on plate and cover with 1/4 cup of Salsa Verde on each piece of Mahi Mahi
